Broccoli Cheese soup!

It's a wonderful time for soup! Nothing beats something warm when it is cold outside!

Broccoli and Cheese soup

1 Tbsp Butter melted
1/2 Med onion
1/4 c Melted butter
1/4 c Flour
2 c 1/2 and 1/2
2 c Chicken stock
1/2 lb Broccoli
1 c Julienned carrots
1/4 nutmeg (I have used Allspice and I have also omitted both and it came still came out tasty!)
8 oz of Cheddar

Saute onion in butter

Whisk and cook melted butter and flour over med heat for 3 to 5 mins. Stir constantly

Slowly add 1/2 and 1/2 and chicken stock whisk whole time

Add broccoli, carrots and sauted onion

Cook low until veggies are tender

Add salt and pepper to taste

Blend soup to puree

Add cheese and stir in nutmeg (optional)

YUM! Great with fresh baked bread but that recipe is for another day!
